Haitian Pineapple Down Cake: A Sweet Taste of Home

There is something special about a homemade cake that can instantly bring back memories. For many Haitian families, a pineapple upside-down cake is more than just a dessert it can be a reminder of family gatherings, celebrations, childhood memories, and the comforting flavors of home.

Haitian-style pineapple upside-down cake is a simple yet beautiful dessert. The cake is soft and tender, while the pineapple slices and cherries caramelize with brown sugar and butter, creating a delicious topping that becomes the centerpiece of the cake when it is turned upside down.

A Classic Dessert With a Caribbean Touch

The beauty of this cake is its simplicity. You don’t need complicated ingredients or advanced baking skills to make something that looks and tastes impressive.

The bottom of the baking dish is covered with a mixture of melted butter and brown sugar. Pineapple slices are then arranged on top, with a maraschino cherry placed in the center of each slice.

The cake batter is made with basic pantry ingredients such as flour, baking powder, eggs, sugar, butter, and milk. Once the batter is poured over the pineapple, everything goes into the oven until the cake is golden and perfectly baked.

  • 1 cup brown sugar
  • ⅓ cup unsalted butter, melted
  • 1 can (14 oz) pineapple slices, drained
  • 8 maraschino cherries

For the Cake

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 2 tablespoons unsalted butter, softened
  • 2 eggs
  • 1 cup sugar
  • 1 cup milk

How to Make It

Preheat the oven to 350°F (180°C) and grease an 11 x 8-inch baking dish.

Combine the brown sugar and melted butter, then spread the mixture evenly across the bottom of the dish. Arrange the pineapple slices over the mixture and place a maraschino cherry in the center of each slice.

To prepare the batter, combine the flour and baking powder in one bowl. In another bowl, beat the softened butter and eggs together. Gradually add the sugar and mix until smooth.

Add the flour mixture gradually, alternating with the milk. Mix until the batter is well combined, then pour it evenly over the pineapple.

Bake for approximately 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool for about 10 minutes. Carefully loosen the edges with a thin knife, place a serving plate over the baking dish, and flip the cake while it is still warm.

Let it cool before slicing and serving.
